Our chaga is sustainably wild-harvested in winter from the Knoll Farm forest. Chaga is a medicinal mushroom that grows on birch trees and resembles a wooden burl. It is known for its strong anti-viral properties, and is an adaptagen, which means it helps your body cope with stress and change. Many people also feel it helps with focus and energy, much like caffeine but without the jitters.
The taste is a bit like Japanese bancha tea – earthy, woody, mild, with slight bitterness and hints of vanilla. We love the taste, and kids love it with a little honey.
We cut our chaga into small chunks and sell it in 2 oz bags. We find chunks to be the simplest and best way to make a medicinal brew. Just take 2-3 chunks and simmer gently, then steep, in a pot of water. You can continue refilling the pot and rebrewing 4 or 5 times before the tea gets too weak. We also like to drink chaga tea cold.
